1 lb firm tofu 1 cup sunflower seeds 1 cup bread crumbs (whole grain preferable) 1 small onion, diced finely 2 Tb lite soy sauce ½ tsp salt 2 tsp garlic powder 2 tsp onion powder 1 tsp ground cumin 1 tsp basil
Crumble tofu in large bowl. Grind sunflower seeds in a food processor or blender (you may also roast them for a few minutes first to give a richer flavor). Add ground seeds to tofu along with remaining ingredients, mixing well. Pack this mixture firmly into a well-oiled loaf pan or small casserole dish. Bake at 350 degrees for 40 minutes, keeping loaf covered for first 30 minutes. Leftovers are great for quick sandwiches as well.
