Eggless Salad Sandwiches
1 package (14 oz) firm, waterpacked tofu, crumbled
½ cup celery, diced fine
2 Tb green onion, diced fine
1 Tb fresh parsley, diced fine
¼ tsp chopped garlic
1/8 tsp turmeric
¼ tsp celery seed
¼ tsp dried tarragon
salt and pepper to taste
2 tsp prepared yellow mustard
½ cup Nayonaise or Vegenaise
Mix all ingredients together until well combined. Chill for at least an hour before serving. Serve on whole grain bread or in pitas with carrots, sprouts, lettuce, peppers, etc.
